Whew!! It’s four a.m. And I am wide awake already thinking about what things I need to do for school! Lol! Yikes!! As long as I won’t be able to go back to sleep, I decided to take a little time to catch up here. Bet you wondered what happened to me? Well, it’s the start of the school year and it’s taking me a little time to just get into the swing of things. Last week and this week, I have worked both of my jobs, and I am trying really hard to just stay on top of all of it. You know the drill, work, work, dishes, laundry, pay bills, housework, lawn, the list just grows.
My teaching career has always been an ever evolving thing. I never wanted to be the teacher who just pulled out the September folder, and so I am constantly changing, rearranging, and doing new things. It’s great but has its drawbacks too as you are constantly reinventing the wheel. So getting it all going and keeping up at home is tough.
Running to my second job five days and sometimes six in a week also puts a strain on life, and I have been tired as I try to just get back into my routine. But what a hugeeeeeee difference from last year! Physically I feel so much better. My weight loss at this point is slow, which drives me crazy but is predictable. But physically I just feel totally different than last fall!
I feel as though for the first time in so many years, I can keep up with my jobs. Although stressful, I do not have my added weight but especially I don’t have the brain fog, the constant itchy skin, the hair and nail issues, weird food cravings, intolerance to cold, all of it on the endless list of symptoms.
And I don’t have the mental issues either. The mental part of the brain fog, the sadness, the lack of self worth. I am happy! And I don’t feel dragged down by the gowing list of ever increasing symptoms. What a huge difference!
I have been increasingly hungry though since school started, so Dr. Jack’s great advice was… Eat! Giggles!! Yeah… That is a great idea, lol…. I am trying to stay on top of having food ready so Sunday, it was the Bills game and I just was in the mood for some Chicken soup. I posted that on my Facebook page and a lot of people asked me for the recipe. I cook a lot like my mom, no recipe…. Just chop and cook. But I know people are always looking to spruce up their Dr. Jack cooking repertoire.
Chris’s super easy chicken soup!
I just buy some organic chicken,which I package off into servings but for the soup, I usually use a breast and two thighs, or a breast, thigh and leg, something with a bone to make it. I put it in a pot with water, some chopped celery, carrots, some peeled and chopped parsnips, and a little bit of chopped onion. Occasional,y I throw in one whole peeled tomato which cooks down and falls apart. But I only do that when fresh ones are available.
Thats it! All just chopped! I throw in a little fresh parsley and two bay leaves and just boil it until the meat is falling off the bone. As it cooks I carefully skim off the icky stuff from the top which makes the soup cloudy if you don’t. I take out the chicken, cool it and cut it up throwing it back in. Salt and pepper and that’s it!! No chicken broth or any added icky preserved ingredients. Super yummy and filling from the vegetables.
Hope you try it. It’s better on cold days but I was aching for it.
So, no I haven’t forgotten you! I have a list of things for my blog. Just give me a few more days to get the routine down. Hope it’s the beginning of a great Fall for you!
